Queso Mac n Cheese
An unexpected but amazing creation happened one day when we had some extra queso (I know, extra?!) lying around the house. The ultimate comfort dish with a Mexican flare = the best of both worlds.
INGREDIENTS
Flaca’s queso container
1 lb of your favorite short pasta
1 cup of shredded cheddar cheese, or cheese of your choice
Kosher salt
Oven-safe cast iron pan or Pyrex dish
Optional: Sliced jalapeno & paprika, for garnish
DIRECTIONS
Bring a large pot of water to a boil, and salt the water.
Preheat the oven to broil.
Add in your pasta once the water is boiling, and cook according to package instructions.
A few minutes before the pasta is finished, transfer the queso into a microwave-safe bowl, cover with a paper towel, and microwave for 1-2 minutes to heat the queso.
Once the pasta is done cooking, strain the noodles. Transfer both the hot pasta and warmed queso to your oven-safe cast iron pan or Pyrex dish. Carefully mix them together.
Top the pasta with the shredded cheese, and place into the oven’s broiler. Carefully watch to avoid burning the top. Allow the cheese to become bubbly and brown, between 30 seconds to 1 minute.
Remove the mac and cheese from the oven and allow to cool before serving. Top with sliced jalapeno & a sprinkle of paprika if desired. Enjoy!
