Southwestern Salad with Flaca's Tortilla Strips
It’s starting to feel like summer more and more every day. This quick and easy salad is the perfect lunch or addition to a summer BBQ. The star of the salad is our tortilla strips that add the perfect crunch and saltiness!
INGREDIENTS
Flaca’s tortilla strips
1 head of romaine lettuce, washed and chopped
1 /4 cup sweet canned corn
1/4 cup black beans
1/4 cup cherry tomatoes, chopped
1/4 cup red bell pepper, chopped
1/4 cup cilantro, washed and chopped
1 large avocado
1/2 cup-1 cup Greek yogurt
1/8-1/4 cup lime juice
Kosher salt
Optional: Lime wedges, for garnish
DIRECTIONS
1. Add your lettuce and all of your salad ingredients in a large bowl. Cut the avocado into strips, and put half aside.
2. In a separate bowl, add the Greek yogurt, lime juice, and kosher salt to taste. Add in 1/2 of your avocado and squish with a fork until smooth and combined.
3. Finish the salad by drizzling in the avocado crema and tossing everything together. Add Flaca’s tortilla strips on the top of the salad. Add lime wedges for garnish and/or for squeezing. Enjoy!
